Potatoes, Mexican Style


During our trip to Torreon we dined at one of our favorite restaurants on Independencia, Rincon del Bif. They are known for their Beef but the side dishes make a good meal even better. We ordered their signature Chipotle Potatoes which are hard to duplicate exactly since much of the experience there at Rincon del Bif is the company you keep, but here is a recipe which will suffice till our next visit.

Mexican Potatoes

2 lbs. Potatoes, cubed
1 T. Rosemary
1/2 C. Olive oil
2 T. diced, canned Chipotle Peppers
salt and pepper to taste
1/4 C. grated White Mexican cheese (Oxaca, Chihuahua are good)
Cilantro, finely chopped

Preheat oven to 375°F. Place the potatoes roasting pan. add the rosemary, olive oil,chipotle pepper, salt & pepper to taste. Turn potatoes to coat evenly. Roast, turning occasionally until potatoes are tender (45 minutes). Remove from oven. Sprinkle with cheese, scant amount of cilantro & serve.
