A little taste of Mexico~


Bruschetta Mexicana

Ingredients:
1 pkg (8 oz) cream cheese, room temp
1 1/2 Tbsp pureed chipotle peppers (in adobo)
2 avocados
1 lime
1/2 tsp ground cumin
Salt and pepper to taste
6 roma tomatoes
1 minced garlic clove
1/2 c. Cilantro leaves
Garnish with Queso Fresco (optional), 1 French Baguette

Mix cream cheese & chipotle together and set aside. In a seperate container, combine avocado , juice of 1 lime, cumin, salt & pepper to taste. Mixture should have a creamy texture. Remove the seeds from the tomato and discard. Dice tomato and garlic, set aside. Slice bread lengthwise and then slice into 8 piece. Drizle with olive oil and place under a broiler until golden. Cool slightly & spread with the cream cheese mixture. Place avocado puree on top of cream cheese. Top with diced tomatoes & small amount of cilantro leaves. Garnish with small amount of Queso Fresco.

**For any of my Mexico friends: If I can't find good french bread I have substituted Bolillo bread rolls for French bread. It is a European style bread that came to Mexico in the 1800's with Emperor Maximilian & the "French Intervention".
